Jainso Gallegos, an employee with Flying Food Group, said his union, Unite Here Local 11, portrays his company as evil, “but that’s not true.”
“The union portrays the company as evil—‘They don’t want to give benefits, they don’t want to negotiate’—but that’s not true,” said Gallegos. “They twist information, manipulate followers, and act like a religious sect, harming both the company and the employees themselves.”
Gallegos said the dispute between Flying Food Group and Unite Here Local 11 has created concern among workers about job stability tied to airline catering contracts.
“The reality is, if customers walk away because of this campaign, it’s not executives who feel it first — it’s workers like us,” he said. “People depend on these jobs to support their families.”
Flying Food Group is a Chicago-based airline catering company that provides in-flight meals and services to major international carriers operating at U.S. airports, employing workers across multiple facilities tied to airline partnerships.
Unite Here Local 11 represents hospitality and food service workers in Southern California and Arizona and has engaged in public campaigns targeting airline catering companies as part of labor organizing efforts.
Gallegos said he believes many employees are focused on maintaining stability in their work.
“I come to work, I do my job, and I want the company to succeed because that means we succeed,” he said. “What’s happening right now doesn’t reflect what many of us actually experience day to day.”
Gallegos is an employee of Flying Food Group working in airline catering operations.
