Swiss International Air Lines (SWISS) announced that it will introduce the flavors of Canton Uri to its First and Business Class guests as part of its 'SWISS Taste of Switzerland' inflight culinary program. Starting March 5, for a duration of three months, premium travelers on long-haul flights from Switzerland will enjoy exclusive creations by Chef Joshua Lüscher from the Zwyssighaus restaurant in Bauen, Canton Uri.

Lüscher, who has earned 15 GaultMillau points and is recognized as one of Switzerland's rising culinary stars, expressed his excitement about this collaboration. “My meal creations will soon be served at unfamiliar lofty heights,” he said. “And I’m truly delighted to have this unique opportunity to work with SWISS and bring a little piece of our Uri culinary culture to travelers from all over the world. ”

The menu features an array of dishes showcasing traditional and contemporary blends. First Class customers can anticipate starters like tatar of cured pikeperch with mustard pickles and marinated white asparagus. Main course options include veal steak with herb butter jus or goat meatballs with crayfish sauce. Desserts feature selections such as dulce de leche tartlet with poached pear.

Business Class travelers will be offered starters like vitello salmone with capers and toasted brioche. Their main courses include braised beef shoulder with morels or chicken breast in Casimir curry sauce, followed by desserts such as lemon cake with mascarpone.

Premium Economy Class passengers will also experience Uri-inspired cuisine, including beef stew in red wine sauce and rhubarb tiramisu.

Julia Hillenbrand, SWISS Head of Brand Experience, commented on the initiative: “We’re extremely pleased to bring the flavors of Canton Uri to our inflight guests. Joshua Lüscher’s meals are a deft blend of traditional fare and contemporary flair, which sits excellently with who and what SWISS aspires to be. ”

This endeavor continues SWISS's tradition under its 'SWISS Taste of Switzerland' program that has been running for 22 years in collaboration with gategourmet. Every three months, a new top chef is invited to create dishes from their home canton for long-haul flights departing from Switzerland. These meals are complemented by regional wines and cheeses.
