Cathay Dining, a subsidiary of the Cathay Group and a prominent flight kitchen, has introduced a redesigned warewash system. This development marks the company as the first airline caterer in Hong Kong to support recycling inbound food waste.

This investment reflects Cathay Dining's commitment to sustainability and operational excellence. "We are proud to lead the way in sustainable practices and operational excellence within the inflight dining industry," said Agatha Lee, Chief Executive Officer of Cathay Dining.

The new system aims to reduce utility consumption while featuring an innovative food waste segregation design. It is designed to meet evolving customer needs with a focus on sustainability, including recycling inbound food waste.

Cathay Dining has increased its food waste recycling capacity by 200% with this new facility. The design includes conveyors and compactors that separate food waste from general waste. The collected food waste is then transferred to the nearby Organic Resources Recovery Centre (O·PARK) for anaerobic digestion and electricity generation. O·PARK can process up to 500 tonnes of food waste daily, generating enough electricity for approximately 8,000 households annually.

The system also reduces utility consumption by separating stripping and washing processes. Washers operate only when necessary, which optimizes their use and minimizes unnecessary operation. Compared to the old system, it achieves up to a 70% reduction in electricity consumption and nearly a 60% reduction in water use under current conditions.

The newly designed system addresses dynamic demands in equipment washing with multi-purpose washers that handle different types of equipment simultaneously. This results in over a 20% increase in machine utilization.

Safety improvements include Methyl Methacrylate (MMA) flooring with anti-slip properties, upgraded lighting panels, and enhanced ventilation systems to reduce slips and falls.
