Singapore Airlines has introduced a revamped inflight menu in collaboration with celebrity chef Sanjeev Kapoor. The airline aims to enhance its onboard dining experience, particularly for passengers traveling between India and Singapore. The new offerings include two premium thali options: Shahi Thali and Ruchi Thali, each featuring a variety of traditional Indian dishes.

Sanjeev Kapoor is known for modernizing traditional Indian cuisine and has worked closely with Singapore Airlines to create these distinct thali experiences. The Shahi Thali includes rich, aromatic dishes such as Murg Lababdar and Dal Makhani, while the Ruchi Thali offers lighter flavors with items like Aloo Gobi and Tadka Dal. Both thalis are served with freshly baked rotis, pickles, raita, and desserts like Gulab Jamun or Skrikhand.

The introduction of these menus aligns with Singapore Airlines' strategy to cater to high demand for quality Indian-themed cuisine among its passengers. The airline operates numerous flights to major Indian cities under its brand and through its subsidiary Scoot.

Singapore Airlines places significant emphasis on premier inflight dining as part of the core travel experience. This includes collaborations with Michelin-starred chefs and sommelier-curated wine lists. The "Book the Cook" service allows first and business class passengers to pre-order gourmet meals from an exclusive menu.

The airline's focus on using premium ingredients extends to sourcing organic spices native to the dish's origin and offering health-conscious options by reducing oil and salt content without compromising taste. Meals are presented on eco-friendly bento-style trays to maintain freshness.

Singapore Airlines continues to innovate its inflight dining options by expanding vegan and plant-based choices, collaborating with regional chefs, and utilizing AI-powered meal customization for frequent fliers. Future menu revamps may include Peranakan dishes crafted by hometown Singaporean chefs.

In addition to culinary enhancements, the airline is committed to sustainability efforts such as reducing single-use plastics in meal services and exploring zero waste initiatives like composting leftovers.

Overall, Singapore Airlines' dedication to elevating its inflight menus underscores its commitment to excellence in passenger experience through strategic culinary partnerships and innovation.
