Alain Muders Business Unit Catering Paris | Servair

One of Servair's production sites at Roissy CDG airport has been awarded halal certification. This development marks a significant step in the company's efforts to cater to Middle Eastern airlines with meals that meet specific dietary requirements.

To achieve this certification, Servair implemented a thorough operational process along with constant checks to ensure compliance with halal standards. The company has conducted extensive training for its staff, ensuring all team members who handle halal products are aware of and adhere to these requirements. The goal is to prevent any cross-contamination between halal and non-halal items.

Additionally, the use of a halal armband is introduced as part of the process. This serves as an indicator that halal procedures are being followed in specific areas, which include washing equipment and food production. Only authorized personnel are allowed near these designated zones.

Raw materials undergo rigorous control, where each ingredient is classified based on its compliance with halal criteria according to product data sheets. These ingredients are then stored separately in dedicated areas.

Servair also ensures strict separation of workflows and preparation spaces. Dedicated work areas will either be physically separated or managed by time schedules to avoid cross-contamination risks.

A new kitchen, specifically designed for preparing halal dishes, is set to open in the first quarter of 2025. This facility will feature modern equipment intended to provide optimal conditions for meal production.

This certification responds to increasing customer demand and reinforces Servair’s standing in the global in-flight catering industry.
