Swiss International Air Lines (SWISS) will offer its premium inflight guests a culinary experience inspired by Southern Switzerland starting June 4. As part of the 'SWISS Taste of Switzerland' program, chef Federico Palladino from the Michelin-starred Cuntitt restaurant in Canton Ticino has crafted meals for SWISS First and SWISS Business cabins. These include smoked trout with Sbrinz panna cotta, lamb loin with potato mantecata, and shortcrust tartlet with pistachio cream.

For the next three months, passengers on long-haul flights from Switzerland can enjoy exclusive meal creations from Canton Ticino. The meals are designed by Federico Palladino, who runs his osteria in Castel San Pietro. His dishes combine haute cuisine sophistication with Italian warmth, earning him 16 GaultMillau points and a Michelin star.

"We’re delighted to welcome Ticino back on board as our guest canton," says SWISS Chief Commercial Officer Heike Birlenbach. "Federico’s meals are wonderfully suited to the start of the summer season: they bring the sun to the table and capture all the aromas of Switzerland’s sunny south."

"I am honored to represent Ticino and its cuisine aboard SWISS’s flights," Federico Palladino adds. "And I hope our passengers enjoy my creations as much as I have enjoyed devising and developing them. After all, travel and enjoyment go firmly hand in hand."

In SWISS First Class, travelers can choose starters like smoked trout with Sbrinz panna cotta or carrot and ginger soup with confit langoustine. Main courses include lamb loin glazed with black garlic or pikeperch with yuzu sauce. Desserts feature coffee mousse with salted caramel sauce.

SWISS Business guests start their meal with slow-cooked beef or radish and Grana Padano salad. Main courses offer veal filet with Parmesan crust or barbecue-glazed chicken breast options. Desserts include a shortcrust tartlet with pistachio cream.

Premium Economy Class passengers also enjoy a three-course meal inspired by Canton Ticino, featuring chicken piccata as a main course option.

The 'SWISS Taste of Switzerland' program has been showcasing regional culinary delights for 22 years in collaboration with catering partner gategourmet. Each quarter, a new top chef creates dishes representing their home canton for long-haul flights from Switzerland.
